Cheesy Waffled Hash Browns

Serve with a sunny side up egg, some bacon, extra parmesan and a sprinkle of smoked paprika for a complete breakfast dish
Ingredients
- 1 bag {28 ounces} Shredded Hash Browns, thawed
- 3 whole Eggs
- 1/3 cup Milk
- 1/2 cup Parmesan Cheese, plus more for garnish
- 1/2 cup Cheddar Cheese
- 1 tablespoon Chives, chopped
- 1/2 teaspoon Kosher Salt and Ground Black Pepper
Directions
- STEP 1Preheat your oven to 300 degrees F or on the warm setting.
- STEP 2In a large bowl fold together hash browns, eggs, milk, cheese, chives and kosher salt and pepper.
- STEP 3Preheat your waffle iron, if it has a ‘crispy outside’ setting, set it to that. Be sure to liberally spray your waffle iron with nonstick cooking spray before each batch.
- STEP 4Use a cup measurement and work in batches, have a sheet pan handy to put the waffles in the oven to keep warm between each waffle.
- STEP 5Evenly spread a cup of hash brown mixture in your waffle iron close and cook until waffle is crispy and browned, about 7-8 minutes depending on your waffle iron. Keep an eye on it to keep from burning. Keep waffles warm in your oven until ready to serve.
- STEP 6Top waffles with eggs of your choice, protein of your choice, garnish with extra parmesan cheese and sprinkle with smoked paprika. Enjoy!
